    en_HK.UTF-8 means
    language is English, localization is UK, default encoding is UTF-8
    en_US United States English
    en_UK United Kingdom English
    zh_CN Chinese China
    and more

    Changes can be made using
    export LANG=zh_CN.UTF-8

    ==========Supplement============
    For example, en_US.UTF-8
    en is the language, which is English. The responses include zh (Chinese), jp (Japanese), etc.
    US is the country, which can be understood as localization. Different countries may have different display forms, such as currency units, time formats, etc.
    UTF-8 is the encoding. Corresponding to GBK, ISO8859-1, ASCII, etc.
