How to upgrade PHP? Will upgrading make the old website program unusable?

I haven’t built a website for many years. I want to install a new website program, but I found that the previously installed PHP version is too low, which makes the website program unusable. Can it be upgraded? Will the original website program be affected after the upgrade?

The previous server was WIN2003 version, PHP was version 5.0, and SQL matched it
