A change in the new version affects the operating system's Open With dialog box. This prompt will be displayed when the user selects it from the right-click context menu. It gives you the option to launch the file using a different application, for example, an image in an image editor instead of a viewer.
The current version of Windows 11 lists multiple apps when selecting Open with from the right-click context menu. The option to "Choose another application" displays an opening prompt with other applications and an option to select another program from the local system.
The new dialog box changes things around. It features new styles that support dark and light modes, but has several key differences from the current dialog. The "Additional options" list of the current dialog box lists all the available applications that Windows 11 selects for file extensions, divided into "Suggested applications" and "More options" sections.
It's unclear how apps will be selected for inclusion in either section. Usage may come into play, but Microsoft may also use it to promote (some) apps or system defaults over third-party apps.
There are two options listed at the bottom of the interface. The first one to open the Microsoft Store and the app that can open the file type. The second gives you the option to select an executable file from your local system. Options are provided to switch the default application for a file type or open it with a selected application at once.
The new feature is not yet generally available, but only on some machines. You can enable it with the help of Vivetool. Simply run ./vivetool /enable /id:36302090 from a PowerShell prompt to enable it.
