Keep in mind that if you accidentally make an SOS call, if you click Cancel as soon as possible, you should be able to end it before it reaches emergency services.
Also don’t forget that you can add multiple emergency contacts, in fact, you can add more than two dozen. I didn't find the limit, but I reached 25.

The Health settings in the Apple Watch app are used to calculate calorie burn and other health metrics, separate from your Medical ID profile.
To see if someone else needs to pull up your Medical ID, press and hold the Side and Volume buttons on your nearest iPhone , then swipe from left to right on the Medical ID slider.
On Apple Watch, press and hold the Side button. Medical ID slider will be available along with Shutdown and SOS options.
